2 tablespoons olive oil (divided)
2 boneless, skinless chicken breasts (cut into 1" chunks)
1/2 teaspoon salt

1 cup uncooked basmati rice
1 can (15 oz) black beans, drained and rinsed
1 can (14.5 oz) petite diced tomaotes, drained
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
2 1/2 cups chicken broth
1 cup shredded cheese
green onion, chopped tomatoes, sour cream, avocado
